Easy Buttery Pie Crust

This 4 ingredient pie dough is an absolute must in my recipe collection. From my famous apple dumplings to of course pies and tarts this recipe has never let me down.
Ingredients:
1 C (2 sticks) unsalted butter, cut into cubes and very cold.
2 1/4 C all-purpose flour 1 tsp. salt
8 to 10 tablespoons ice water
Instructions:
1. Put butter (cut into cubes), flour and salt into a food processor (you can use a pastry cuter also).
2. Pulse food processor until the butter is about peas sized, and evenly incorporated into flour (it happens pretty quickly).
3. While the food processor is running slowly drizzle in the ice water, until the dough starts to come together.
4. Turn the dough out onto floured surface and form it into a ball. Cover it with plastic wrap and put it into the refrigerator to chill. Chill for at least 1 hour, full disclosure I sometimes skip this step and it still turns out good, just not as flaky.

No Fuss Pizza Dough

One of the reasons I love this pizza dough recipe so much is it's "everybody in the pool", (to quote Guy Fieri). I like my recipes easy, "no muss no fuss" you know what I'm talking about. I'm a busy mom I have no time for persnickety dough that sticks to everyone and everything. Pizza night in our house is a fun family time and I want to focus on that, this tried and true pizza dough recipe lets me do that.
Ingredients:
4 C flour, plus more for rolling the dough out
1 tsp. sugar
2 1/4 tsp. of dry yeast (one envelope)
2 tsp. of salt
1 1/2 C of warm water
2 Tbsp. olive oil, plus 2 tsp.

Instructions:
1. Throw everything into a mixing bowl, a stand mixer works the best. Although sometimes I like to just use my hands, it's up to you.
2. Mix until the dough comes together and starts pulling away from the sides of the bowl. If the dough seems really sticky add a little more flour. If it seems really dry add a little more warm water.

           Instructions:

           3. Turn the dough out onto a floured surface and knead for about 5 min. pushing and stretching the dough as you go. You are developing the gluten's at this stage you want them stretched! The dough should form a nice tight ball when you're done.

           4. Grease the mixing bowl with the remaining olive oil and add the dough, cover with plastic wrap and let that baby sit! (about 1 hour in a warm place).

           5. Turn the dough out onto a floured surface and divide into 2 equal pieces. Roll each ball out to desired size, shape and thickness.

           Optional.

           6. Personally I like to pre- bake the crust a little so to do that I grease a pan and bake the dough at 425 degrees for about 8 to 10 min. Checking on it regularly.

Fresh Lavender Mint Tea

This simple fresh tea is made with just three ingredients and you might have two of them growing in your garden right now!
Ingredients:
-10 large mint leaves (throw a few more in if yours are on the small side).
-2 tsp. lavender (just the flower bits).
-1 Tbsp. Honey
- 10 to 12 oz. water (standard coffee cup size)
Instructions:
1. Boil water in a tea kettle.
2. Get a coffee cup with a tea infuser or strainer that fits inside your cup. (picture below) If you don't have one of these you can use a bit of cheesecloth to make a "tea bag" some lavender may escape but that's totally fine.
3. Place mint leaves and lavender into the infuser (or whatever you have).
4. Poor boiling water over the mint and lavender and allow to steep 10 to 15 min.
5. When the tea is done steeping put the honey in and sir well.
Enjoy!
